Move Over KFC!
Chicken Fried Chukar + White Gravy served over Mashed Potatoes.
I double dredged and double dipped these breasts before pressing into a blend of seasoned breadcrumbs+panko for a thick and crunchy outter crust. Fried in olive oil until golden brown and then baked to ensure the crust stays crispy while I whipped up a delicious creamy white gravy infused with a flavorful combination of veges.
Ladle the gravy over the chukar and serve with a side of buttered mashed potatoes.

Ingredients
- 6 boneless chukar breasts
- 1/2 cup flour
- 2 eggs + 1 tbsp water
- 1/2 cup plain breadcrumbs
- 1/2 cup panko breadcrumbs
- 1 tbsp granulated garlic powder
- 2 tsp dried parsley
- 1 tsp kosher salt
- 1 tsp black pepper
- 3/4 cup olive oil
- 4 oz mushrooms, sliced
- 1 medium onion, sliced
- 1/2 cup red bell pepper, diced
- 2 tbsp unsalted butter
Gravy Ingredients
- 3 tbsp unsalted butter
- 3 tbsp flour
- 1 1/2 cups milk, plus extra for thinner gravy
- kosher salt and pepper, to taste
Instructions
- Preheat the oven to 325 degrees.
- Using a meat mallet gently pound each chukar breast to be about 1/4 inch thick.
- In a bowl. combine the breadcrumbs and spices and set aside. Add the flour to a plate and set aside. In a bowl, beat the eggs plus 1 tablespoon of water.
- Heat a skillet over medium-low heat and add the oil. Working in batches, dredge the chukar breasts in flour, dip in egg wash, dip in flour, dip in egg wash and then press firmly into the seasoned breadcrumbs. Add each breast to the skillet and brown on each side until golden, about 1 minute per side. You may have to do this in batches. Place the golden breasts into a glass baking dish and cover tightly with foil. Bake for 30 minutes.
- Drain the oil from the skillet and re-heat over medium-low heat. Add the butter, oil, mushrooms, onions and red bell pepper cooking until the onions soften, about 10 minutes. Remove and set aside.
Gravy Instructions
- Heat a saucepan over medium heat and melt the butter. Once the butter is melted, add the flour and whisk to create a paste. Slowly add the milk and whisk until smooth. Reduce heat and add additional milk if you prefer a thinner gravy. Season with salt and pepper to taste. Combine the vegetables with the gravy and remove from heat.
- Ladle the gravy over the chukar and serve with a side of buttered mashed potatoes.
