These antelope burgers are simple at best, but when you top them with thick slices of Gouda cheese and crispy fried leeks, you wind up with a wild game burger that’s far more sophisticated and flavorful.
Makes 6 Burgers
INGREDIENTS
- 1 lb ground antelope burger
- 1/2 cup bread crumbs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 egg
- a pinch of salt and pepper
- 2 large leeks sliced (whites of the leek)
- 2 tablespoons butter
- 6 Slices Gouda cheese
- 6 Hamburger buns
- Mayo-horseradish (3 tbls mayonnaise + 1 tsp horseradish)
- 1 ripe avocado sliced
DIRECTIONS
Mix together ground antelope burger, garlic powder, onion powder, breadcrumbs, egg and a pinch of salt and pepper. Form into large hamburger patties. Heat skillet over medium heat and add butter and sliced leeks. Saute leeks until they become crispy about 10-12 minutes. Remove from heat and set aside. Place burgers direct on hot grill and cook for about 6-7 minutes or until browned on one side. Carefully flip burgers over and continue to cook until done. Top with sliced Gouda cheese, fried leeks and continue to cook until cheese is melted. Serve in a toasted bun with mayo-horseradish and sliced avocado.
