The Fourth of July is just days away and with everyone firing up the grill, I wanted to share this stellar onion stacked elk cheeseburger recipe. What makes these cheesy elk burgers so delicious is the dried onion used in the patty along with lightly breaded and fried stacked onion rings. What better way to showcase these home grown sweet onions then on top of a perfectly grilled elk burger!

Ingredients
- 1 1/2 – 2 pounds ground elk
- 1/2 cup dried onion flakes
- 1 teaspoon kosher salt
- Freshly ground black pepper
- 1 tablespoon olive oil
- 4 slices mild cheddar cheese
- 4 hamburger buns (optional)
Onion Rings
- 1 large sweet onion
- 1/2 cup flour
- 1/4 teaspoon baking powder
- 1/2 cup water
- 1 egg
- 1 teaspoon sweet paprika
- 1/2 teaspoon kosher salt
- 1 cup vegetable oil
Directions
In a large bowl, combine ground meat, dried onion flakes and salt. Using your hands or a burger press, form 4 large meat patties. Season each patty with a pinch of salt and freshly ground black pepper. Drizzle olive oil over the top of each one and set aside.
Whisk the flour, baking powder, water, egg, paprika and salt together in a bowl. Carefully slice the onion into thin rings. Heat oil in a shallow skillet over medium heat. Dip onion rings in batter and fry until golden brown. Remove and drain on a paper towel. Season with a pinch of kosher salt.
Heat an outdoor grill to high heat. When your grill is hot, place burgers on the grill grate cooking for 3-4 minutes. Rotate a 1/4 turn and cook for an additional 3-4 minutes. Flip burgers and repeat until your desired doneness. During the last few minutes of cooking, add a slice of cheddar cheese and top with the onion rings.
Note: If you have a Traeger Outdoor Grill, pre-heat the grill to 375 degrees using Hickory wood pellets. Place the burgers on the grill grate cooking for 4-5 minutes. Rotate a 1/4 turn and cook for an additional 4-5 minutes. Flip burgers and repeat until your desired doneness. During the last few minutes of cooking, add a slice of cheddar cheese and top with the onion rings.
