Coffee Seasoning Rub for Elk and Venison

This is a simple seasoning blend that combines the flavor from dark roasted coffee beans, sweet brown sugar, paprika and hints of heat from the Ancho chile powder. Tastes great on elk and venison meat when grilled over high heat or pan seared in a well seasoned cast iron skillet.

Coffee Seasoning Rub

In a bowl, combine all ingredients together forming a thick seasoning paste. Rub all over elk or venison steaks and let marinate in a refrigerator overnight. Heat an outdoor grill and cook until your preferred doneness. Remove from heat and cover loosely with a piece of foil letting the meat rest for 10 minutes. Slice thin strips and finish with a pinch of kosher salt. ~Enjoy!

  • 2 tablespoons dark roasted coffee grounds
  • 2 tablespoons dark brown sugar
  • 2 tablespoons paprika
  • 1 teaspoon Ancho chile powder
  • 1 teaspoon kosher salt
  • 2 tablespoons olive oil

  1. Hi Kristy!
    Do you find that elk roast is though when grilling at a high heat and not cooking slowly? Or in your oven roasted recipe, does cooking for 40 min at 425, produce a more though end product as opposed to cooking longer at a lower temp?
    I’ve only cooked with small cuts of elk, and am wanting to try the roasts so all advice is welcome. 🙂
