A Baked Mouthwatering Combination
Parmesan, is a dish that consists of breaded breast meat covered in tomato sauce with mozzarella, parmesan, and sometimes creamy Brie cheese. This particular upland game bird recipe dishes up 6 lightly breaded and fried chukar breasts baked in a pasta sauce with cooked orzo pasta, creamy melted slices of Brie cheese and topped with grated parmesan cheese.
A perfect single skillet dish that’ll easily serve a party of 2-4. Have more chukar breasts? Double the recipe and bake in a 13×9 baking dish.

Ingredients
- 6 boneless skinless chukar breasts
- 1/2 cup flour
- 2 eggs + 1 tbsp water
- 1/2 cup plain breadcrumbs
- 1/2 cup panko breadcrumbs
- 1/4 cup grated Parmesan cheese
- 2 tsp dried parsley
- 1 tsp kosher salt
- 3/4 cup olive oil
- 1 1/2 cups orzo pasta, cooked
- 2 cups pasta sauce
- 6 slices brie or fresh mozzarella cheese, 1/4 inch in thickness
- 1 tbsp grated Parmesan cheese
- 1 tbsp flat leaf parsley, chopped
Instructions
- Preheat the oven to 375 degrees.
- In a bowl. combine the breadcrumbs, Parmesan cheese, spices and set aside. Add the flour to a plate and set aside. In a bowl, beat the eggs plus 1 tablespoon of water.
- Heat a skillet over medium-low heat and add the oil. Working in batches, dredge the chukar breasts in flour, dip in egg wash and then press firmly into the seasoned breadcrumbs. Add each breast to the skillet and brown on each side until golden, about 1 minute per side. You may have to do this in batches. Set aside on a plate when done.
- Add the pasta sauce and cooked orzo pasta to a 12 inch oven proof skillet. Place the sliced Brie cheese and fried chukar breasts in the sauce. Top with grated Parmesan cheese and fresh flat leaf parsley. Bake in the oven for 30 minutes until bubbling hot.
- Remove from oven and serve.

Tastes great, the meat is still very tough though
