These bite sized finger foods are typically served before the main course and are always a crowd pleaser keeping your guests sustained until the main dish is ready to be served.</p>
<p>A popular Hors d’oeuvre is the stuffed mushroom which is an elegant classic appetizer filled with rich and warm ingredients. My crowd-pleaser recipe combines ground elk seasoned with perfumy fennel, breadcrumbs and Gruyere which is a sweet and salty cheese. Stuff each individual buttery mushroom cap with a generous amount of filling, bake until the tops are golden brown and watch how fast they disappear when served.</p>

										<content:encoded><![CDATA[<p>This meaty cheese queso dip appetizer is always a hit for large gatherings or holiday parties and no one will ever suspect that you&#8217;ve used wild game meat. Instead, they&#8217;ll be asking you for the recipe. It&#8217;s easy to make and you can always substitute ground elk or venison if you don&#8217;t have antelope in the freezer. ~enjoy!</p>
<h4>Ingredients</h4>
<ul>
<li>1 pound ground antelope</li>
<li>1 tablespoon olive oil</li>
<li>1 tablespoon cumin powder</li>
<li>1 teaspoon chili powder</li>
<li>1 teaspoon garlic powder</li>
<li>1 teaspoon oregano</li>
<li>1/2 teaspoon kosher salt</li>
<li>2 &#8211; 15 ounce jars Tostitos Medium Salsa Con Queso</li>
<li>1 cup red salsa</li>
<li>1/2 cup cilantro, chopped</li>
</ul>
<h4>Directions</h4>
<p>Heat a skillet with olive oil over medium heat. Add the ground antelope and cook until browned. Season the meat with cumin powder, chili powder, garlic powder, oregano and salt. Remove when done. Spoon the Salsa con Queso dip into a medium sized crockpot an add one cup of your favorite red salsa. Carefully add the cooked antelope meat and stir until everything is combined. Top with chopped cilantro and then set the temperature to low. In about an hour, you will have a meaty cheese dip that will be devoured by friends and family.</p>
<p>Serve with tortilla chips.</p>

										<content:encoded><![CDATA[<p>I had the pleasure to be a guest speaker and showcase a few recipes at a Wild Game Cooking class here in Reno, Nevada. The class was put on by the Nevada Department of Wildlife and Nothing To It Culinary Center. It was a great success. This was just one of the recipes I shared with the class. I used ground bison in these baked black bean flautas, but you can easily substitute ground elk, venison or antelope.</p>
<p>Makes 10-12 Flautas</p>
<h4>Ingredients</h4>
<ul>
<li>1 pound ground wild game meat</li>
<li>1 cup black beans</li>
<li>8 ounce cream cheese, softened</li>
<li>1 cup Monterey jack cheese, shredded</li>
<li>4 ounce chopped mild green chiles (Hatch)</li>
<li>1 teaspoon chili powder</li>
<li>1 teaspoon oregano</li>
<li>1 teaspoon coriander</li>
<li>1/2 teaspoon kosher salt</li>
<li>10-12 flour tortillas</li>
</ul>
<h4>Directions</h4>
<p>Preheat the oven to 425<span class="_Tgc _s8w">°</span> F.</p>
<p>Heat a skillet over medium heat and add 1 teaspoon of olive oil. Add the ground game and cook until lightly browned. Combine the seasonings and the chopped chiles with the meat. Remove when the meat is fully cooked.</p>
<p>In a large bowl stir together the ground meat, black beans, Monterey jack cheese and softened cream cheese.</p>
<p>Lay the tortillas out on a clean surface and evenly divide the meat mixture in the center of each one. Roll up tightly placing the seam side down on a non stick baking sheet. Brush the tops of each with olive oil and bake until golden brown, about 12-14 minutes.</p>
<p>Slice each one into thirds and serve with guacamole and sour cream. ~Enjoy</p>
<p><em>Note: You can also add a whole canned mild green chile into each tortilla and then add the mixture before rolling up.</em></p>

										<content:encoded><![CDATA[<p>These appetizers were a quick fix when the neighbor called and asked that I bring a little something over before dinner. Of course, it was Christmas day and there were no grocery stores open. So, I improvised with what I had on hand and apparently it worked out great. They were all devoured as soon as I walked in the front door. I just wanted to share since a few people had asked on instagram and facebook.</p>
<p>I used essentially all of the same spices that I use when I cook up tacos or fajitas and simply rolled everything up tightly in flour tortillas. Brushed with a little olive oil and baked until golden brown, about 12 minutes. ~Enjoy!</p>
<p>And as always if you don&#8217;t have ground antelope, substitute with venison or elk.</p>
<h4>Ingredients</h4>
<ul>
<li>1 pound ground antelope</li>
<li>2 Anaheim chilis or 4.5 ounce can of chopped green chilis</li>
<li>1 teaspoon cumin powder</li>
<li>1 teaspoon chili powder</li>
<li>1 teaspoon oregano</li>
<li>1/2 teaspoon kosher salt</li>
<li>1/2 teaspoon coriander</li>
<li>1 cup shredded Monterey jack cheese</li>
<li>1/4 cup cotija cheese, crumbled</li>
<li>8-10 flour tortillas</li>
<li>olive oil</li>
</ul>
<h4>Directions</h4>
<p>Preheat the oven to 425 F.</p>
<p>Heat an outdoor grill and roast the Anaheim chilis until the skin is charred. Remove from heat and set aside to cool. Carefully scrape off the outside skin and discard the seeds. Using a sharp knife, finely dice up the chilis and set aside.</p>
<p>Heat a skillet over medium heat and add 1 teaspoon of olive oil. Add the ground game and cook until lightly browned. Combine the seasonings and the chopped chilis with the meat. Remove when fully cooked.</p>
<p>Layout the flour tortillas and evenly divide the meat in the center of each one. Top each one with both cheeses and roll up tightly placing the seem side down on a non stick cooking sheet. Brush the tops of each taquito with olive oil and bake until golden brown, about 12 minutes. Slice each one into thirds and serve with guacamole and sour cream.</p>

<p>Makes 18-20 sliders</p>
<p><strong>Ingredients</strong></p>
<p><strong>For the Sliders</strong></p>
<ul>
<li>4 Chorizo Links</li>
<li>2 lbs ground Elk</li>
<li>20 slices Havarti cheese</li>
<li>2 cups baby arugula</li>
<li>20 mini rolls or hamburger buns</li>
<li>2 tablespoons butter melted</li>
</ul>
<p><strong>Slider Dry Rub Seasoning</strong></p>
<ul>
<li>2 teaspoons paprika</li>
<li>1/2 teaspoon kosher salt</li>
<li>1/2 teaspoon cayenne pepper</li>
<li>1/2 teaspoon garlic powder</li>
<li>1/2 teaspoon onion powder</li>
<li>1/2 teaspoon coriander</li>
</ul>
<p><strong>Pickled Red Onion</strong></p>
<ul>
<li>1 large red onion thinly sliced</li>
<li>1 cup cider vinegar</li>
<li>1 tablespoon sugar</li>
<li>1 1/2 teaspoon kosher salt</li>
<li>2 tablespoons whole peppercorns</li>
</ul>
<p>Whisk together vinegar, sugar and salt in a bowl until dissolved. Place onion in a jar with peppercorns and pour vinegar over the top. Cover and refrigerate for 24 hours before using.</p>
<p><strong>Directions</strong></p>
<ol>
<li>Mix together all slider seasonings in a small bowl.</li>
<li>Carefully run a knife down the length of the chorizo links and remove casings. In a large bowl, mix chorizo together with ground elk. Form meat patties slightly larger than the size of your rolls or buns. Depress the center with your thumb so that the meat doesn&#8217;t shrink while cooking. Lightly season each side of the sliders with the dry rub seasoning.</li>
<li>Place sliders on hot grill and cook for approximately 5-6 minutes. Turn and continue to cook another 4-5 minutes. Tear Havarti cheese in half and place on top of each slider. Remove from grill when cheese is melted.</li>
<li>Heat oven to broil. Cut rolls or hamburger buns in half, place upside down on a baking sheet and brush with melted butter. Place under the broiler until browned.</li>
<li>Place chorizo elk sliders on toasted rolls and garnish with arugula, pickled red onions and a thin layer of mayonnaise.</li>

The subtle sweetness of the mashed parsnips mixed together with the flavor of the ground antelope and sausage really make these stuffed mushrooms a sure fire hit! You can also substitute ground elk or ground venison.</p>
<p><strong>Ingredients<br />
</strong></p>
<ul>
<li>1/2 pounds ground antelope</li>
<li>1/4 pounds ground Italian sausage</li>
<li>20-24 white/brown mushrooms, stems removed</li>
<li>4 ounce cream cheese softened</li>
<li>1/2 cup Parmesan cheese, grated</li>
<li>4 parsnips</li>
<li>1 yellow onion, finely chopped</li>

<li>1 tablespoon sage leaves, chopped</li>
<li>1 teaspoon garlic powder</li>

<p><strong>Directions</strong></p>
<p>Heat the oven to 375 degrees. Peel and then chop parsnips in half inch rounds. Fill a small pan with water and bring to a boil. Add chopped parsnips to boiling water and cook until tender. Drain water and mash with a potato masher. Heat skillet over medium heat and add 1 tablespoon butter and chopped onion. Sauté the onion until translucent. Add ground antelope and sausage to the skillet and cook until browned. Remove from heat. In a large bowl add softened cream cheese, Parmesan cheese, mashed parsnips, garlic powder, sausage and antelope. Season with salt and pepper if needed and set aside. Using the same skillet, heat over medium heat. Melt the remaining butter and add chopped sage leaves. Place the mushrooms top side down and cook for 1 minute. Turn and cook for another minute.  Place mushrooms on a lined cookie sheet and fill each mushroom cap with a heaping spoonful of antelope filling. Bake in oven for 25 minutes or until cheese is fully melted.</p>
