Hi, I have found that some older, heavier, Canadian Geese do not lend themselves to many "goose breast" type recipes due to their tendency to toughness. I have tried grinding and making burgers and even sausages from the meat but this is so dry unless doused with lots of pork or other fat. This has been the case even when eaten rare to medium rare so it's not down to over cooking. Anyone have any ideas ??
